Upstands
Upstands are normally 20mm thick and the typical high is 50 mm, 70 mm or 100mm.
Although, these can be modified to any size at your preference. Upstands are fitted at the back of worktops or breakfast bars and tiles can still be fitted above the upstand.

Instead of tiles or glass splashback you can opt to cover the wall with quartz using the same stone as the worktop.
